We present an easy version of a beverage from our latest menu. This is a party-sized pre-mixed that is loaded with flavours of the Christmas time, making it perfect for a holiday party. Reserve the remaining syrup you can use for morning drinks, desserts, or for more rounds of this cocktail.

Yields 10 servings
Ingredients for the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Premix (yields 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Cordial: Put all the components inside a pot, bring to a simmer, agitating so the sugar melts. After that, turn off the heat and leave to cool down entirely. Decant into a sealable bottle, close it and store chilled, it can be stored for around one month.
For the Batch Mix: Combine every liquids into one big jug, allow it to infuse for 60 minutes, then pass it through preferably using muslin, to ensure it's perfectly clear.
For serving: Add 85ml of your premix to a cocktail shaker filled with ice, and agitate carefully for one minute to chill. Filter to a frosted cocktail glass or a similar vessel, garnish with the cranberries and finish using a light spray with the mandarin essence over the top.
